- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 6 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
- Add lemon juice, lemon zest, and butter. Simmer until sauce thickens slightly.
- Return chicken to the skillet, spooning the sauce over the top. Cook for an additional 3-4 minutes.
- Garnish with fresh parsley and serve hot.
