- 1 pound ground beef or Italian sausage
- 1 jar (24 ounces) marinara sauce
- 4 cups beef or chicken broth
- 1 (14.5 ounces) can diced tomatoes
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a skillet, cook ground beef or sausage until browned; drain excess fat.
- Add cooked meat to the slow cooker along with marinara sauce, broth, diced tomatoes, garlic powder, salt, and pepper.
- Stir well and cook on low for 6-8 hours.
- About 15 minutes before serving, add broken lasagna noodles to the slow cooker and cook until tender.
- In bowls, dollop ricotta cheese and sprinkle shredded mozzarella and Parmesan over the hot soup.
- Garnish with chopped fresh basil and serve hot.

- You can substitute ground turkey or plant-based meat for a lighter or vegetarian option.
- Ensure noodles are added towards the end to prevent overcooking and mushiness.
