  • 2 cups sliced mushrooms (button or cremini)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups heavy cream or vegan cream alternative
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent. Stir in sliced mushrooms and cook until tender. Add minced garlic and cook for another minute. Stir in chopped spinach until wilted. Season with salt, pepper, and dried oregano. Remove from heat and set aside.
  2. In a saucepan, combine heavy cream and grated Parmesan cheese. Stir over low-medium heat until cheese melts and sauce thickens. Season with salt and pepper; add white wine or nutmeg if desired.
  3. Preheat oven to 375°F (190°C). Spread a thin layer of the creamy mushroom sauce in a baking dish. Layer lasagna noodles over the sauce. Spread half of the mushroom-spinach mixture over noodles, then pour a portion of sauce. Repeat layers, finishing with noodles topped with remaining sauce and shredded mozzarella.
  4. Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden. Rest for 10 minutes before slicing. Garnish with fresh basil or parsley before serving.
