- 8 oz spaghetti or your favorite pasta
- 2 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they soften and release juices, about 3 minutes.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Combine the cooked pasta with the tomato and spinach mixture. Toss well to coat.
- Finish with grated Parmesan cheese, salt, and pepper. Garnish with fresh basil.
Notes
- Feel free to add crushed red pepper flakes for a spicy kick.
- You can substitute spinach with arugula or kale.
- Use freshly grated Parmesan for the best flavor.
