Instructions

  1. In a large mixing bowl, combine flour, salt, and sugar. Cut in the chilled butter until mixture resembles coarse crumbs.
  2. Add ice water gradually, mixing until dough comes together. Divide dough in half, shape into discs, wrap in plastic, and chill for at least 1 hour.
  3. Preheat oven to 425°F (220°C). Roll out one disc of dough on a floured surface and fit into a 9-inch pie plate.
  4. In a bowl, toss sliced apples with lemon juice, sugar, cinnamon, and nutmeg. Pour filling into prepared crust.
  5. Roll out second dough disc, place over filling, and trim edges. Crimp to seal and cut small slits for steam escape.
