- 1 cup unsalted butter, chilled and cubed
- 1/4 to 1/2 cup ice water
- 6-7 cups peeled, sliced apples (Granny Smith or Fuji)
- 3/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
Instructions
- In a large mixing bowl, combine flour, salt, and sugar. Cut in the chilled butter until mixture resembles coarse crumbs.
- Add ice water gradually, mixing until dough comes together. Divide dough in half, shape into discs, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 425°F (220°C). Roll out one disc of dough on a floured surface and fit into a 9-inch pie plate.
- In a bowl, toss sliced apples with lemon juice, sugar, cinnamon, and nutmeg. Pour filling into prepared crust.
- Roll out second dough disc, place over filling, and trim edges. Crimp to seal and cut small slits for steam escape.
- Bake for 45-50 minutes until crust is golden brown. Cool slightly before serving.

- Use cold butter and ice water for flaky crust.
- Mix different apple varieties for balanced flavor and texture.
- Brush crust with egg wash for a shiny finish, if desired.
