- 2 lbs beef stew meat or chicken thighs
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 2 cups beef or vegetable broth
- 1 can diced tomatoes
- 2 cloves garlic, minced
- Salt and pepper to taste
- Herbs: thyme, rosemary, bay leaves
Instructions
- Place all ingredients into the crockpot.
- Season with salt, pepper, and herbs.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until meat is tender and vegetables are cooked through.
- Adjust seasoning before serving.
Notes
Feel free to swap in your favorite vegetables or protein sources. For a thicker stew, mash some potatoes or add a cornstarch slurry at the end.
