  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  2. In a separate bowl, beat the softened butter and sugar until light and fluffy.
  3. Gradually add eggs and vanilla extract, beating until smooth.
  4. Alternately add the dry ingredients and apple cider to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.
  5. Stir in chopped fresh apples.
  6. Drop batter by tablespoonfuls onto a parchment-lined baking sheet, spacing evenly.
  7. Bake at 350°F (175°C) for 12-15 minutes until edges are golden. Cool on wire racks.
  8. To prepare the filling, beat together cream cheese, caramel sauce, powdered sugar, and vanilla until smooth and fluffy.
  9. Spread or pipe filling onto the flat side of one cookie, then top with another to form a sandwich. Repeat with remaining cookies.
