- 1 cup granulated sugar

- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1 cup chopped fresh apples
For the Caramel Filling
- 1 cup caramel sauce (preferably homemade or high-quality store-bought)
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat the softened butter and sugar until light and fluffy.
- Gradually add eggs and vanilla extract, beating until smooth.
- Alternately add the dry ingredients and apple cider to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.
- Stir in chopped fresh apples.
- Drop batter by tablespoonfuls onto a parchment-lined baking sheet, spacing evenly.
- Bake at 350°F (175°C) for 12-15 minutes until edges are golden. Cool on wire racks.
- To prepare the filling, beat together cream cheese, caramel sauce, powdered sugar, and vanilla until smooth and fluffy.
- Spread or pipe filling onto the flat side of one cookie, then top with another to form a sandwich. Repeat with remaining cookies.

- Use fresh, crisp apples for best flavor and texture.
- Chill assembled whoopie pies for a few hours to help flavors meld.
- Store in an airtight container in the refrigerator for up to 3 days.
