A traditional Polish potato soup made with hearty potatoes, onions, garlic, and flavorful broth, topped with fresh herbs and crispy bacon bits.

Ingredients

  • 4 large potatoes, peeled and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup sour cream
  • 3 slices bacon, cooked and crumbled
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Add sliced potatoes and cook for 5 minutes, stirring occasionally.
  3. Pour in the broth, season with salt and pepper, and bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Use an immersion blender to blend the soup until smooth, or leave some chunks for texture.
  6. Stir in sour cream, adjust seasoning as needed.
  7. Serve hot, garnished with crispy bacon and chopped parsley.
