- 4 large potatoes, peeled and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup sour cream
- 3 slices bacon, cooked and crumbled
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, melt butter over medium heat. Add chopped onions and garlic, sauté until translucent.
- Add sliced potatoes and cook for 5 minutes, stirring occasionally.
- Pour in the broth, season with salt and pepper, and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Use an immersion blender to blend the soup until smooth, or leave some chunks for texture.
- Stir in sour cream, adjust seasoning as needed.
- Serve hot, garnished with crispy bacon and chopped parsley.
Notes
- For a creamier soup, add more sour cream or a splash of heavy cream.
- Can be made vegetarian by using vegetable broth and skipping bacon.
