Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons lemon zest
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, chopped
- 2 tablespoons lemon juice
- Optional: powdered sugar for dusting
Instructions
- Start by whisking together flour, baking powder, and salt in a medium bowl until well combined.
- In a large mixing bowl, combine the melted butter and sugar. Beat in the eggs, one at a time, until the mixture is smooth and fluffy. Stir in lemon zest and vanilla extract.
- Gradually add the dry ingredients into the wet mixture, mixing gently until just combined. Do not overmix.
- Gently fold in the chopped strawberries and lemon juice.
- Pour the batter into a greased 9×9-inch baking pan, spreading evenly. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool before slicing.
Notes
- Use ripe strawberries for the best flavor.
- Ensure strawberries are well drained if using frozen.
- Add chopped nuts or white chocolate chips for variation.
- Allow blondies to cool completely before cutting for clean slices.
