Ingredients
Scale
- 1 lb sausage (pork, chicken, or turkey, according to preference)
- 2 large sweet potatoes, peeled and cubed
- 3 tbsp honey
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika (optional for extra flavor)
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Start by peeling and chopping the sweet potatoes into bite-sized cubes. Toss with 1 tablespoon of olive oil, salt, pepper, and smoked paprika if using. Roast at 425°F (220°C) for 25-30 minutes until golden and tender.
- While the sweet potatoes roast, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Pour in the honey, stirring well. Let simmer for 2-3 minutes to thicken slightly.
- Slice the cooked sausage into bite-sized pieces and add back into the skillet with honey garlic sauce. Toss to coat evenly. Add roasted sweet potatoes and gently stir. Cook for another 2-3 minutes to meld flavors.
Notes
- Feel free to add vegetables like bell peppers or onions for extra flavor and texture.
- Adjust the amount of honey and garlic to suit your taste preferences.
- Cook the sausage thoroughly to avoid any health issues.
