  • 2 large sweet potatoes, peeled and cubed
  • 3 tbsp honey
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika (optional for extra flavor)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Start by peeling and chopping the sweet potatoes into bite-sized cubes. Toss with 1 tablespoon of olive oil, salt, pepper, and smoked paprika if using. Roast at 425°F (220°C) for 25-30 minutes until golden and tender.
  2. While the sweet potatoes roast, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Pour in the honey, stirring well. Let simmer for 2-3 minutes to thicken slightly.
  4. Slice the cooked sausage into bite-sized pieces and add back into the skillet with honey garlic sauce. Toss to coat evenly. Add roasted sweet potatoes and gently stir. Cook for another 2-3 minutes to meld flavors.
