Instructions
- In a mixing bowl, combine the ricotta cheese with the vanilla extract and honey. Mix thoroughly until smooth. Add a pinch of sea salt if desired.
- Using a tablespoon or small cookie scoop, portion out the mixture and roll into small balls. Gently shape each bite with your hands for uniformity.
- Roll each ball in chopped pistachios until evenly coated. Press some pistachios into the tops for extra flavor and crunch.
- Place the bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up. Before serving, drizzle with extra honey or sprinkle with more pistachios for presentation.
