- 2 large eggs, beaten
- 1 cup walnuts

Instructions
- Prepare the shrimp by coating them in cornstarch, then dip into beaten eggs.
- Heat oil in a fryer or deep pan to 350°F (175°C). Fry shrimp until golden and crispy, then drain on paper towels.
- Toast walnuts in a dry skillet until fragrant and caramelized. Set aside.
- In a small saucepan, combine honey, soy sauce, rice vinegar, and sugar. Cook until the sauce thickens slightly.
- Toss the fried shrimp in the honey sauce, then sprinkle with toasted walnuts.
- Serve immediately, garnished with fresh herbs if desired.

- Adjust honey and soy sauce for sweetness and saltiness to taste.
- For extra crunch, double fry the shrimp.
