- 6 cups Chex cereal
- 1 cup unsalted butter
- 1 cup packed brown sugar
- 1/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup mixed nuts (optional)
- Sea salt for sprinkling
Instructions
- Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper.
- In a saucepan over medium heat, melt butter. Stir in brown sugar and corn syrup, bring to a boil, and cook for 4-5 minutes without stirring.
- Remove from heat and stir in vanilla extract.
- Pour caramel mixture over the Chex cereal in a large bowl, tossing until evenly coated.
- Spread the mixture onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes.
- Remove from oven and let cool slightly. Melt chocolate chips in a microwave-safe bowl, stirring until smooth.
- Drizzle melted chocolate over the cooled Chex Mix and sprinkle with sea salt and nuts.
- Allow the chocolate to set before serving or storing.
Notes
- For extra crunch, add pretzels or more nuts.
- Store in an airtight container for up to one week.
