Instructions
- Preheat oven to 400°F (200°C). Roast red and yellow peppers until charred, then peel and set aside.
- In a blender, combine roasted peppers, garlic, olive oil, smoked paprika, salt, and pepper. Blend until smooth to make the sauce.
- Season tilapia fillets with salt and pepper.
- Heat a skillet over medium-high heat and cook the tilapia for 3-4 minutes per side until golden and cooked through.
- Serve the tilapia topped with roasted pepper sauce and garnished with fresh parsley.
