- 2 chicken breasts, sliced into strips
- 1 cup orzo pasta
- 2 tablespoons Cajun seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Fresh parsley, chopped
Instructions
- Cook orzo in salted boiling water until al dente, drain and set aside.
- Season chicken strips with Cajun seasoning.
- Heat olive oil in a skillet over medium heat, cook chicken until browned and cooked through, then remove and set aside.
- In the same skillet, add garlic and sliced peppers, sauté until tender.
- Pour in chicken broth and heavy cream, bring to a simmer.
- Add cooked orzo and chicken to the skillet, stir well to combine and heat through.
- Garnish with chopped parsley before serving.
Notes
- Adjust Cajun seasoning to taste for spiciness.
- Use chicken thighs for more tenderness.
- Serve with a side of crusty bread if desired.
