- 1 packet taco seasoning
- 1 cup cooked white or brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, chopped
- Optional toppings: sour cream, avocado slices, hot sauce
Instructions
- Heat a large skillet over medium heat and add olive oil. Add ground meat and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning and a splash of water. Simmer for a few minutes until flavorful.
- Prepare rice according to package instructions.
- Chop cherry tomatoes, cilantro, and any other desired toppings.
- In each bowl, layer rice, seasoned meat, black beans, corn, and tomatoes. Top with shredded cheese and garnish with cilantro. Add optional toppings like sour cream or avocado slices.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly in microwave or on stove.
- To keep rice moist, add a splash of water or broth before reheating.
