  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, chopped

Instructions

  1. Heat a large skillet over medium heat and add olive oil. Add ground meat and cook until browned. Drain excess fat if needed.
