Discover the ultimate zucchini beef recipe—a quick and healthy zucchini stir-fry perfect for busy weeknights. This savory dish combines tender beef slices with crisp zucchini in a flavorful sauce, offering a wholesome and delicious meal in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 pound (450g) thinly sliced beef (sirloin or flank steak)
  • 2 medium zucchinis, sliced into thin rounds
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional for extra flavor)
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil or cooking oil of your choice
  • Salt and pepper, to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Start by slicing the beef into thin strips and slicing the zucchinis into rounds. Mince the garlic and grate the ginger. Keep everything ready for quick assembly.
  2. In a small bowl, combine the beef slices with 1 tablespoon soy sauce, a pinch of salt and pepper, and a drizzle of sesame oil. Let it marinate for at least 10 minutes.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the beef in a single layer and cook until browned, about 2-3 minutes per side. Remove from the pan and set aside.
  4. In the same pan, sauté the minced garlic and grated ginger until fragrant, about 30 seconds.
  5. Add the sliced zucchini to the pan and stir-fry for about 3-4 minutes until tender but still crisp. Season with a pinch of salt and pepper.
  6. Return the cooked beef to the pan with the zucchini. Add remaining soy sauce and oyster sauce if using. Toss everything together and cook for another minute.
  7. Drizzle with sesame oil, garnish with sliced green onions, and serve hot over steamed rice or your favorite grain.

Notes

  • Use tender young zucchinis for best texture and quick cooking.
  • For a gluten-free version, substitute soy sauce with tamari.
  • Adjust the marinade time for more flavor—up to 20 minutes if desired.
