- 1 pound baby potatoes or small potatoes, halved
- 2 tablespoons olive oil

Instructions
- Place beef pieces in the slow cooker.
- In a small bowl, combine melted butter, minced garlic, soy sauce, thyme, and pepper.
- Pour the garlic butter mixture over the beef, stirring to coat evenly.
- Seal and cook on low for 6-8 hours until beef is tender.
- Preheat oven to 400°F (200°C).
- Toss potatoes in olive oil and season with salt and pepper.
- Spread potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.
- Serve beef bites hot with crispy potatoes, garnished with parsley.
