- 1.5 lbs beef stew meat, cut into bite-sized pieces
- 4 medium potatoes, diced
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a skillet with olive oil over medium-high heat and brown the beef pieces until seared on all sides. Transfer to slow cooker.
- Add diced potatoes, minced garlic, butter, thyme, rosemary, salt, and pepper into the slow cooker.
- Cover and cook on low for 6-8 hours until beef is tender and potatoes are cooked through.
- Garnish with chopped fresh parsley before serving.
Notes
- For extra flavor, add a splash of beef broth or Worcestershire sauce during cooking.
- Serve with steamed vegetables or a side salad for a complete meal.
