Instructions
- Heat oil in a skillet and brown beef chunks on all sides. Transfer to slow cooker.
- In the same skillet, sauté onion, garlic, and ginger until fragrant.
- Add curry powder, turmeric, cumin, salt, and pepper; cook for 1 minute.
- Pour spice mixture over beef in the slow cooker along with coconut milk.
- Cook on low for 6-8 hours until beef is tender.
- Garnish with fresh cilantro and serve over cooked rice.
