- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar

- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 1 cup fresh basil leaves, for garnish
- Optional: sliced bell peppers or zucchini for added color
Instructions
- Start by seasoning the chicken breasts generously with salt, pepper, and dried herbs. In a small bowl, whisk together balsamic vinegar, olive oil, and minced garlic. Marinate the chicken in half of this mixture for at least 15 minutes for extra flavor.
- Preheat your oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil, then sear the chicken for about 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced red onion and cherry tomatoes. Pour in the remaining balsamic marinade and cook for 2-3 minutes until slightly thickened. Return the chicken to the skillet, spoon some of the sauce over it, and transfer the skillet to the oven.
- Bake the dish in the oven for 12-15 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Remove from the oven, garnish with fresh basil leaves, and serve hot.
