  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 1 cup fresh basil leaves, for garnish
  • Optional: sliced bell peppers or zucchini for added color

Instructions

  1. Start by seasoning the chicken breasts generously with salt, pepper, and dried herbs. In a small bowl, whisk together balsamic vinegar, olive oil, and minced garlic. Marinate the chicken in half of this mixture for at least 15 minutes for extra flavor.
  2. Preheat your oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil, then sear the chicken for about 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced red onion and cherry tomatoes. Pour in the remaining balsamic marinade and cook for 2-3 minutes until slightly thickened. Return the chicken to the skillet, spoon some of the sauce over it, and transfer the skillet to the oven.
  4. Bake the dish in the oven for 12-15 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Remove from the oven, garnish with fresh basil leaves, and serve hot.
