- 1 pound smoked sausage, sliced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tablespoon olive oil

Instructions
- Heat olive oil in a large skillet over medium heat.
- Sear sausage slices until browned, then remove and set aside.
- Sauté onion, garlic, and bell pepper until softened.
- Add rice and cook, stirring, for 2 minutes.
- Pour in chicken broth, bring to a boil.
- Reduce heat, add sausage back in, cover, and simmer for 20 minutes until rice is tender.
- Season with salt and pepper, then serve hot.
