- 1 pound dried red beans
- 1 smoked sausage link, sliced
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1/2 teaspoon cayenne pepper
- 2 bay leaves
- 4 cups chicken broth
- 2 cups cooked white rice
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Soak the red beans overnight in water, then drain.
- In a large pot, sauté sliced sausage until browned; remove and set aside.
- In the same pot, sauté onions, bell peppers, celery, and garlic until tender.
- Add spices, bay leaves, soaked beans, and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until beans are tender.
- Remove bay leaves, season with salt and pepper, and stir in cooked sausage.
- Serve over cooked rice, garnished with chopped green onions.

- Soaking beans reduces cooking time and enhances digestibility.
- You can substitute smoked sausage with Andouille sausage for authentic flavor.
