Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of oil if needed. Sauté minced garlic until fragrant, about 1 minute. Add spinach and cook until wilted, about 2-3 minutes.
- Pour heavy cream into the skillet with the spinach and garlic. Bring to a gentle simmer, then stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Reduce heat to low and simmer for 5 minutes, allowing flavors to meld. Add sun-dried tomatoes or mushrooms if desired.
