- 1 cup unsalted butter, softened

- 1 cup apple, finely chopped or grated
- For Cinnamon Sugar Coating:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla, mix until combined.
- In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, mixing well. Fold in chopped apple.
- In a small bowl, combine sugar and cinnamon for coating.
- Ball the dough into 1.5-inch spheres and roll each in cinnamon sugar mixture.
- Place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow cookies to cool on wire racks before serving.
Notes
- For a softer cookie, bake for the shorter time. For crispier edges, add an extra minute.
- Use fresh apples for more flavor; Granny Smith or Fuji work well.
- You can substitute vegan butter and sugar for a vegan version.
