Ingredients
Scale
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped nuts or chocolate chips (optional)
For the crumb topping:
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup unsalted butter, cold and cubed
- 1 teaspoon cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch baking pan or line with parchment paper.
- In a large bowl, whisk together mashed bananas, eggs, vanilla extract, and melted butter.
- In a separate bowl, combine flour, sugar, baking soda, and salt. Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in nuts or chocolate chips if desired.
- In a small bowl, combine flour, brown sugar, and cinnamon. Add cold butter and blend until coarse crumbs form.
- Pour batter into prepared pan and spread evenly. Sprinkle crumb topping over the batter, pressing lightly to ensure it sticks.
- Bake for 45-50 minutes until a toothpick inserted into the center comes out clean. Let cool slightly before slicing and serving.
Notes
- Use ripe bananas for best flavor and natural sweetness.
- Do not overmix the batter to keep the cake light and tender.
- Chill crumb topping before sprinkling to prevent melting during baking.
- Serve warm with vanilla ice cream or whipped cream for extra indulgence.
