  • Total Time: 1 hour 5 minutes
  • Yield: 9 slices

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped nuts or chocolate chips (optional)

For the crumb topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch baking pan or line with parchment paper.
  2. In a large bowl, whisk together mashed bananas, eggs, vanilla extract, and melted butter.
  3. In a separate bowl, combine flour, sugar, baking soda, and salt. Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in nuts or chocolate chips if desired.
  4. In a small bowl, combine flour, brown sugar, and cinnamon. Add cold butter and blend until coarse crumbs form.
  5. Pour batter into prepared pan and spread evenly. Sprinkle crumb topping over the batter, pressing lightly to ensure it sticks.
  6. Bake for 45-50 minutes until a toothpick inserted into the center comes out clean. Let cool slightly before slicing and serving.

Notes

  • Use ripe bananas for best flavor and natural sweetness.
  • Do not overmix the batter to keep the cake light and tender.
  • Chill crumb topping before sprinkling to prevent melting during baking.
  • Serve warm with vanilla ice cream or whipped cream for extra indulgence.
