Ingredients

Scale
  • 1 lb (450g) boneless chicken breasts or lean beef strips
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • Corn or flour tortillas for serving
  • Optional toppings: sour cream, shredded cheese, fresh cilantro, salsa

Instructions

  1. Thinly slice the chicken or beef, and chop the bell peppers and onion into strips. Mince the garlic and set aside.
  2. In a small bowl, combine olive oil, chili powder, cumin, smoked paprika, oregano, salt, pepper, and lime juice. Mix well to create a flavorful marinade.
  3. Add the sliced meat, peppers, onions, and garlic into the crockpot. Pour the marinade over everything and toss gently to coat.
  4. Set your Crock-Pot to low for 6-8 hours or high for 3-4 hours until the meat is tender and flavorful.
  5. Once cooked, spoon the fajita mixture into warm tortillas. Add your favorite toppings like sour cream, shredded cheese, fresh cilantro, or salsa. Serve immediately for a delicious fiesta experience.

Notes

  • For extra smoky flavor, add a dash of liquid smoke to the marinade.
  • If you like it spicy, include chopped jalapeños or hot sauce.
  • Ensure to taste and adjust seasoning before serving for optimal flavor.
