- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp chili powder

- 1 tsp smoked paprika
- 1/2 tsp oregano
- Salt and pepper to taste
- Juice of 1 lime
- Corn or flour tortillas for serving

Instructions
- Thinly slice the chicken or beef, and chop the bell peppers and onion into strips. Mince the garlic and set aside.
- In a small bowl, combine olive oil, chili powder, cumin, smoked paprika, oregano, salt, pepper, and lime juice. Mix well to create a flavorful marinade.
- Add the sliced meat, peppers, onions, and garlic into the crockpot. Pour the marinade over everything and toss gently to coat.
- Set your Crock-Pot to low for 6-8 hours or high for 3-4 hours until the meat is tender and flavorful.
- Once cooked, spoon the fajita mixture into warm tortillas. Add your favorite toppings like sour cream, shredded cheese, fresh cilantro, or salsa. Serve immediately for a delicious fiesta experience.
