  • 1/2 cup pumpkin puree
  • 1/4 cup melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

  • For the cinnamon swirl:
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a small loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, combine sugars, pumpkin puree, melted butter, egg, and vanilla until smooth.
  4. Gradually add dry ingredients to wet, mixing until just combined.
  5. For the swirl, mix brown sugar and cinnamon in a small bowl.
  6. Pour half of batter into the pan, sprinkle with cinnamon sugar mixture, then top with remaining batter. Swirl gently with a knife.
  7. Bake for 40-45 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
