- 1 sheet refrigerated pie crust or homemade crust

Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- Mix diced apples, sugar, cinnamon, and lemon juice in a bowl.
- Cut out 12 circles from pie crust using a cookie cutter or glass.
- Place each crust circle into the muffin tin cups, pressing down gently.
- Spoon apple filling into each crust.
- Cover with a second circle of crust or fold the edges over slightly.
- Brush the tops with beaten egg and sprinkle with cinnamon sugar.
- Bake for 20-25 minutes until golden brown.
- Remove and let cool slightly before serving.
Notes
- You can substitute store-bought pie crust for homemade for convenience.
- Adjust sweetness by adding less sugar if desired.
- Serve warm with ice cream or whipped cream for extra indulgence.
