Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, honey, and chopped peaches. Gradually add the dry ingredients, mixing just until combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and let cool on a wire rack.
- In a mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract; beat until creamy and well combined. Once cupcakes are completely cooled, spread or pipe the frosting generously on top of each cupcake.
- Garnish each cupcake with a slice of fresh peach and a drizzle of honey. Add optional edible flowers or mint leaves for extra visual appeal.
