Ingredients
- 1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 1/2 cup plain yogurt
- 2 tbsp lemon juice
- 2 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp chili powder (adjust to taste)
- 1 tbsp ground cumin
- 4 tbsp butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) crushed tomatoes
- 1/2 cup heavy cream or coconut cream
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Combine chicken with yogurt, lemon juice, garam masala, turmeric, chili powder, and cumin. Marinate for at least 30 minutes.
- Heat 2 tablespoons of butter in a large skillet over medium heat. Cook marinated chicken until golden and cooked through, about 8-10 minutes. Remove and set aside.
- In the same skillet, add remaining butter and sauté onions until translucent. Add garlic and ginger, cook for 1 minute.
- Add crushed tomatoes; cook until oil separates from the mixture.
- Return cooked chicken to the skillet. Stir in heavy cream or coconut cream. Simmer on low heat for 10-15 minutes.
- Adjust salt and spices as needed. Garnish with cilantro leaves and serve hot with rice or naan.
