  • 1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp chili powder (adjust to taste)
  • 1 tbsp ground cumin
  • 4 tbsp butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream or coconut cream
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Combine chicken with yogurt, lemon juice, garam masala, turmeric, chili powder, and cumin. Marinate for at least 30 minutes.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Cook marinated chicken until golden and cooked through, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, add remaining butter and sauté onions until translucent. Add garlic and ginger, cook for 1 minute.
  4. Add crushed tomatoes; cook until oil separates from the mixture.
  5. Return cooked chicken to the skillet. Stir in heavy cream or coconut cream. Simmer on low heat for 10-15 minutes.
  6. Adjust salt and spices as needed. Garnish with cilantro leaves and serve hot with rice or naan.
