Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until golden and crispy.
- Meanwhile, sauté sliced smoked sausage in a skillet over medium heat until browned and heated through.
- In a large bowl, mix ranch dressing, sour cream, and shredded cheddar cheese until smooth to form the cheesy ranch sauce.
- Gently fold roasted potatoes and cooked sausage into the ranch mixture.
- Transfer to a baking dish, top with extra cheese if desired, and bake uncovered for 10 minutes until bubbly and golden.
- Garnish with chopped parsley and serve hot.

- For extra flavor, add chopped green onions or jalapeños.
