Ingredients
- 2 cups mashed potatoes (preferably cooled)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup breadcrumbs (preferably panko)
- 2 eggs
- Cooking spray or olive oil
Instructions
- In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan, chopped green onions, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Take spoonfuls of the mixture and roll them into small balls or flatten into patty shapes. Make sure they are compact so they hold together during cooking.
- In a shallow dish, beat the eggs. Dip each potato ball or patty into the egg wash, then coat evenly with breadcrumbs for a golden, crispy exterior.
- Preheat the air fryer to 375°F (190°C). Lightly spray the potato puffs with cooking spray or brush with olive oil. Place them in the air fryer basket in a single layer, leaving space between each. Cook for 10-12 minutes, turning halfway through, until crispy and golden brown.
Notes
- Ensure the mashed potatoes are cooled to avoid excess moisture.
- Use panko breadcrumbs for an extra crunch.
- Do not overcrowd the air fryer basket; cook in batches if necessary.
- Adjust cooking time for larger or smaller puffs.
- Add herbs or spices to customize flavor.
