- 3-4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions
- Season the beef with salt, pepper, and thyme.
- In a skillet, heat olive oil over medium-high heat and sear the beef until browned on all sides.
- Place the seared beef in the slow cooker.
- Add chopped onions, carrots, potatoes, garlic, beef broth, and Worcestershire sauce.
- Cook on low for 8 hours or until the beef is tender and easily shredded.
- Remove the beef and vegetables, and serve with gravy spooned over top.
Notes
- For extra flavor, add rosemary or bay leaves during cooking.
- Replace potatoes with parsnips or turnips for variation.
