- 1 pound sausage links, sliced
- 4 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sliced sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté chopped onions and garlic until translucent.
- Add diced potatoes and cook for 5 minutes, stirring occasionally.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in heavy cream, cooked sausage, salt, and pepper. Heat through.
- Garnish with chopped parsley before serving.
Notes
- You can substitute sausage with chicken or turkey for a leaner option.
- For a thicker soup, add a tablespoon of flour to the broth.
