- 1 pound Italian sausage, sliced
- 1 cup tortellini pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup spinach, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Cook sausage until browned, about 5 minutes.
- Add diced onion and garlic; cook until translucent.
- Pour in chicken broth and diced tomatoes; bring to a boil.
- Add tortellini and Italian seasoning; simmer until pasta is tender, about 10 minutes.
- Stir in chopped spinach; cook for 2 more minutes.
- Season with salt and pepper to taste, and serve hot.
Notes
- You can substitute ground sausage with turkey or chicken for a lighter version.
- For extra flavor, add a pinch of red pepper flakes.
