Ingredients

  • 1 lb smoked sausage, sliced
  • 4 large potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and dice the potatoes into bite-sized pieces. Slice the smoked sausage into rounds. Preheat oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook sausage slices until browned and crispy, about 5 minutes. Remove and set aside.
  3. In a large bowl, toss diced potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread on a baking sheet lined with parchment paper. Roast for 25-30 minutes, until golden and tender.
  4. In another large bowl, mix ranch dressing, sour cream, and shredded cheese. Add roasted potatoes and cooked sausage. Gently stir to coat everything evenly.
  5. Transfer to a greased casserole dish. Bake uncovered for 10-15 minutes until cheese is melted and bubbly. Garnish with fresh parsley if desired.
