- 1 lb smoked sausage, sliced
- 4 large potatoes, diced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/2 cup sour cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash and dice the potatoes into bite-sized pieces. Slice the smoked sausage into rounds. Preheat oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook sausage slices until browned and crispy, about 5 minutes. Remove and set aside.
- In a large bowl, toss diced potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread on a baking sheet lined with parchment paper. Roast for 25-30 minutes, until golden and tender.
- In another large bowl, mix ranch dressing, sour cream, and shredded cheese. Add roasted potatoes and cooked sausage. Gently stir to coat everything evenly.
- Transfer to a greased casserole dish. Bake uncovered for 10-15 minutes until cheese is melted and bubbly. Garnish with fresh parsley if desired.
