- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups chicken or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 cup cooked pasta or rice
- Fresh parsley or basil for garnish
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until translucent, about 3 minutes.
- Add carrots, celery, and zucchini and cook until vegetables are tender, about 5 minutes.
- Pour in diced tomatoes and broth, bring to a boil.
- Stir in oregano, basil, salt, and pepper; reduce heat and simmer for 20 minutes.
- Add cooked pasta or rice, simmer for another 5 minutes.
- Garnish with fresh herbs before serving hot.
Notes
- For added protein, include shredded chicken or豆腐.
- Adjust seasoning to taste, and add a splash of lemon juice for brightness.
