- 1 pound Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (9-ounce) package cheese tortellini
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Brown the sausage in a skillet, then transfer to the crockpot.
- Add chopped onion and minced garlic, cooking until fragrant.
- Pour in chicken broth, add Italian seasoning, salt, and pepper.
- Cook on low for 4 hours.
- Add tortellini and spinach, cook for another 30 minutes.
- Serve hot with grated Parmesan cheese garnished on top.
Notes
- For extra flavor, add a splash of heavy cream before serving.
- You can substitute sausage with grilled chicken or keep it vegetarian with added vegetables.
