- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) corn kernels
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat.
- Add chopped onion and minced garlic; sauté until translucent.
- Stir in corn, black beans, and diced tomatoes; cook for 5 minutes.
- Pour in beef broth and bring to a boil.
- Reduce heat, stir in heavy cream, cumin, smoked paprika, salt, and pepper.
- Simmer for 10 minutes to allow flavors to meld.
- Garnish with chopped parsley before serving.
Notes
- For a spicier version, add a dash of cayenne pepper.
- Serve with crusty bread for a complete meal.
