Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and garlic; sauté until fragrant.
- Add ground turkey, paprika, thyme, salt, and pepper; cook until browned.
- In a baking dish, layer the cubed sweet potatoes and cooked turkey mixture.
- Top with shredded cheese and chopped bell peppers.
- Bake uncovered for 25-30 minutes until the top is golden and bubbly.
Notes
- You can substitute ground chicken or beef for turkey.
- Add chopped spinach or kale for extra greens.
- Serve with a side salad for a complete meal.
