Ingredients

  • 20 large pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells until al dente, drain and set aside.
  2. In a pan, heat olive oil and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Let cool slightly.
  3. In a bowl, combine ricotta, mozzarella, Parmesan, sautéed spinach, salt, and pepper.
  4. Stuff each cooked shell with the spinach-ricotta mixture and place in a baking dish.
  5. Top the stuffed shells with marinara sauce and sprinkle with additional cheese if desired.
  6. Bake uncovered for 25-30 minutes until bubbly and golden.

Notes

  • You can add crushed red pepper flakes for extra spice.
  • Use fresh spinach for best flavor. Substitute with frozen spinach if needed, drain well.
