- 4 large sweet potatoes
- 1 cup fresh cranberries
- 2 crisp apples, sliced
- 1/2 cup chopped walnuts
- 2 tablespoons honey
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Cut baked sweet potatoes in half and carefully scoop out the flesh into a mixing bowl.
- Mix the sweet potato flesh with cranberries, sliced apples, cinnamon, nutmeg, salt, and pepper.
- Scoop the mixture back into the sweet potato shells and top with chopped walnuts and a drizzle of honey.
- Return to the oven and bake for an additional 15 minutes until heated through and slightly caramelized.
