Instructions

  1. Preheat oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for 45-50 minutes until tender.
  2. Cut baked sweet potatoes in half and carefully scoop out the flesh into a mixing bowl.
  3. Mix the sweet potato flesh with cranberries, sliced apples, cinnamon, nutmeg, salt, and pepper.
  4. Scoop the mixture back into the sweet potato shells and top with chopped walnuts and a drizzle of honey.
  5. Return to the oven and bake for an additional 15 minutes until heated through and slightly caramelized.
