Ingredients
Scale
- 3 ripe bananas, mashed
- 1 cup Greek yogurt (plain or vanilla)
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups whole wheat flour (for added health benefits)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper. Mash the ripe bananas thoroughly in a large bowl. Add Greek yogurt, eggs, honey, and vanilla extract. Whisk until smooth.
- In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, and salt. Gradually add the dry mixture into the wet ingredients, stirring gently until just combined. Do not overmix.
- Optional: Fold in chopped walnuts or chocolate chips for added texture and flavor.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for optimal sweetness and moisture.
- You can substitute honey with agave syrup or a little maple syrup.
- Experiment with mix-ins like dried cranberries or shredded coconut for variety.
- Make mini loaves for convenient snacks or gifts.
