Ingredients
Scale
- 1.5 pounds of boneless, skinless chicken breasts or thighs, cut into chunks
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian herbs
- 1 teaspoon paprika (optional for extra color)
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
- Fresh parsley, chopped (for garnish)
Instructions
- Combine minced garlic, olive oil, grated Parmesan cheese, Italian herbs, paprika, salt, and pepper in a bowl. Mix until well combined.
- Toss the chicken pieces in the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes for maximum flavor absorption.
- If using wooden skewers, soak them in water for about 15 minutes to prevent burning during grilling.
- Thread the marinated chicken chunks onto skewers evenly, leaving some space between pieces for even grilling.
- Preheat the grill or grill pan to medium-high heat to ensure a nice sear on the chicken.
- Place the skewers on the grill, cooking for about 12-15 minutes, turning occasionally until the chicken is cooked through and has a beautiful char.
- Remove from grill, sprinkle with fresh parsley, and serve hot. These Parmesan chicken skewers are perfect on their own or paired with salads or grilled vegetables.
Notes
- Use chicken thighs for more juicy and flavorful skewers.
- Marinate for longer if you want a stronger garlic flavor.
- Soak wooden skewers well to prevent burning on the grill.
- Finish with a squeeze of lemon for added brightness.
