- 1 lb chicken breasts, sliced into strips
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Tortillas (for serving)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken, bell peppers, and onions with olive oil, fajita seasoning, and lime juice.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until chicken is cooked through and vegetables are tender.
- Remove from oven, garnish with chopped cilantro, and serve with warm tortillas.
Notes
- Adjust spice level by adding more or less fajita seasoning.
- For extra flavor, marinate the chicken with spices and lime juice for 30 minutes before baking.
