Ingredients

  • 1 cup dried black beans or 2 cans black beans, drained
  • 1 cup long-grain rice
  • 2 sausages, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Cook black beans until tender or use canned beans.
  2. Cook rice according to package instructions.
  3. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  4. In the same skillet, sauté onion, garlic, and bell pepper until soft.
  5. Add cooked beans, cumin, chili powder, salt, and pepper. Stir well and cook for 5 minutes.
  6. Serve the bean mixture over rice, top with sausage slices, cilantro, and lime wedges.

Notes

  • You can add diced tomatoes or jalapeños for extra flavor.
