- 1 cup dried black beans or 2 cans black beans, drained
- 1 cup long-grain rice
- 2 sausages, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Cook black beans until tender or use canned beans.
- Cook rice according to package instructions.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same skillet, sauté onion, garlic, and bell pepper until soft.
- Add cooked beans, cumin, chili powder, salt, and pepper. Stir well and cook for 5 minutes.
- Serve the bean mixture over rice, top with sausage slices, cilantro, and lime wedges.
Notes
- You can add diced tomatoes or jalapeños for extra flavor.
- For a vegetarian version, omit sausage and add extra vegetables or tofu.
