- 1 cup old-fashioned oats
- 1 cup white chocolate chips

Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat butter and brown sugar until creamy. Add egg, vanilla, and maple syrup; mix well.
- Gradually add dry ingredients to wet ingredients, mixing until combined. Stir in oats and white chocolate chips.
- Drop spoonfuls of dough onto prepared baking sheet, spacing evenly.
- Bake for 10-12 minutes until edges are golden. Let cool.
- Melt white chocolate in a microwave or double boiler. Dip the cooled cookies halfway into the white chocolate, then place on a wire rack.
- Decorate with sprinkles before chocolate hardens. Allow chocolate to set before serving.
