Instructions
- Preheat oven to 375°F (190°C).
- Carefully cut a pocket into each chicken breast to create a cavity.

- Stuff each chicken pocket with sautéed mushrooms and shredded cheese.
- Secure openings with toothpicks if needed.
- Brush chicken breasts with remaining olive oil, season with salt and pepper.
- Place in a baking dish and bake for 25-30 minutes, until the chicken is cooked through and golden brown.
- Garnish with chopped parsley before serving.
