Instructions
- Preheat oven to 375°F (190°C).
- Rub chicken breasts with olive oil, salt, and pepper, then place on a baking dish.
- Bake for 25-30 minutes until cooked through.
- Meanwhile, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl to make tzatziki.
- Serve baked chicken topped with generous spoonfuls of tzatziki alongside cooked rice and garnished with additional herbs.
